Poppa’s Potato Soup

When I host the online Appetite to Play workshop, I always talk about my grandfather and his love of making soup. I think of him every time I carry on the tradition. His potato soup is the family favourite and should be served with a generous helping of cheddar cheese. I thought it was about time I shared the recipe.

Ingredients
¼ cup
olive oil
1 medium
onion, diced
4
cloves garlic, minced
5-6
large potatoes, peeled & diced
4 cups
low sodium vegetable or chicken stock
1 tsp
salt
1
bay leaf
1 cup
milk
½ tsp
black pepper
1/4 cup
Cheddar cheese for garnishing
Instructions

1.    Heat oil in the pot on medium low then add onion and sauté for approximately 10 minutes, stirring occasionally. Add garlic and stir for 1 more minute then add potatoes, stock, salt and bay leaf.
2.    Bring to a boil then turn down to simmer on low for 20 minutes or until potatoes are very tender and breaking apart. Remove bay leaf.
3.    Add the milk and stir vigorously to puree potato (if desired, this could also be done in the blender). Adjust seasoning to taste.
4.    Serve immediately with a generous helping of cheddar cheese and a side salad or chopped veggies.
