Simple Banana Oat Blender Pancakes

These pancakes are a wonderful finger food for young children to feed themselves. They can be served warm on their own, or dipped in yogurt if desired. They are simple to prepare, and filled with whole grain oats, protein-rich eggs, and include a touch of sweetness from banana. These pancakes are gluten-free if made using gluten-free certified oats.

Ingredients
1/3 cup
rolled oats
1
ripe banana (fresh or frozen)
2
eggs
1 tsp
oil ( for cooking)
Instructions

Combine banana, oats, eggs in a blender. Blend on high until smooth, about 30 seconds.

Preheat a skillet on medium heat, add a drizzle oil to coat the pan.

Pour enough batter to make small pancakes, about 5 cm (or 2 inches) round. 

Cook for 1-2 minutes, or once bubbles form. Flip, and for another 1-2 minutes or until golden.

Serve warm.
